Peoplehaveasked,“Whyasauerkrautcookbook?”

Thereisnoshortanswer.

I was born in Palmer, Alaska (the Matanuska Valley) where summer sun shines

endlessly, and cabbages grow to 100 pounds. In an annual contest, the winner of the
largestcabbagewins$2000.00.ItcouldbesaidthatIhaveahistorywithcabbage.

WhenIwaseight,myfamilymovedtoCantwell,Alaska.Thetemperaturestherewere

colder,thesoilpoorer,andthechanceofgrowinganythingotherthanflowerswaspretty
slim.Welearnedhowtosurviveonthehomestead.Ahomesteaderimprovisedwithwhat
theyhad,orcouldfindsincestoreswerenot“justdowntheroad.”That’swherecabbage
camein.Itstoredwell,andiffreshwasn’tonhand,apersoncouldmakesauerkrautorbuy
canned. Things were purchased in case lots, so cans of vegetables were the norm for
villagersofAlaska.

Cabbage has been heralded as a cancer inhibitor in the Journal of Agricultural and

FoodChemistry, is loaded with vitamin C, only has 11 calories per service, and goes in
anything.Itcanbefried,boiled,baked,frozen,canned,ordriedandthengroundinafood
millandusedtothickensoup.Makingitintosauerkrautisanaddedbonusbecauseitis
readytouse,asyouwillseeinmydessertsection.

Ican’tbeallwrongaboutthegreatnessofcabbagesincesauerkrautgotitsstartover

2000 years ago when the laborers building the Great Wall of China pickled cabbage in
winetosupplementtheirdiet.GenghisKhancamealongandlikeditsomuchhetookit
backtofortifyhisTartarsastheyplunderedtheirwaythroughEurope.TheGermansliked
thepickledcabbageandnameditsauerkraut,meaningsourcabbage.CaptainCookknew
ofitsimportancewhenhecarriedsauerkrautonhisshipstowardoffscurvy.

Sauerkrautisamainstayinourhousehold.Ikeeprinsed,drained,chopped(inafood

chopperorsnippedwithscissors)sauerkrautintherefrigerator.Itisasimportanttomeas
sourdoughstarteristoanAlaskanhomesteader.

After judging a World Federation of Competitive Eaters cabbage eating contest in

Palmerafewyearsago,Idecidedthiscookbookneededtobewritten.Ifeltsosorryfor
thosecontestantseatingplatesofplain,boiledcabbagebythepound.IwishIcouldhave
spiced it up for them with a little caraway seed, dill, mint, mustard seed, savory, or
tarragon.

In 2-quart saucepan, heat margarine until hot. Add chopped vegetables and mushrooms;
cook over medium heat, stirring occasionally, until cabbage begins to wilt, about 10
minutes. Add remaining ingredients and bring to a boil. Reduce heat, cover, and let
simmerfor30minutes,stirringoccasionally.Serves4.

Heattheoliveoilandbutterinalargepot.Sautétheonionandgarlicuntiltheyaregolden.
Addtherestoftheingredientsandletsimmerforatleastonehour.Ifthesoupistoothick,
addmorewater.Serves6.

2T.soysauce

1c.rice

¾c.cheddarcheese,grated

Heat the oil and butter in a large pot. Sauté onion and garlic until they are limp. Add
cabbage and cook for 5 minutes. Stir to keep from burning. Add stock and soy sauce.
Bring to a boil. Add rice and salt. Lower heat and simmer for 30 minutes. Serve with
gratedcheese.Serves4.

Sauté onion in a large pot with a little oil. Add the water, ham, cabbage, tomatoes with
juice,andchilipowder.Bringmixturetoaboilandaddbeans.Lowerheatandcookfor30
minutes.Serves8.

Put all of the ingredients in a pot and let them cook until the carrots are soft but not
mushy.

Wash,quarter,coreandshredcabbage.Weighout20poundsofcabbage.Thoroughlymix
½poundofpicklingsaltwiththecabbage.Firmlypackintoakegorcrockpot.Thesalt
draws fluid out of the cabbage. If, after you pack it into the crock, it is not covered in
fluid, more fluid can be made by dissolving 2 tablespoons of pickling salt in 1 quart of
water.Doublebag2freezerbagsandfilltheinneronewithwater.Youwillusethisasa
weighttoholdthecabbagedowninthefluid,aswellastokeepairawayfromthecabbage
asitferments.Coveryourcrockwithaclean,thin,whitecloth.Coverthiswithaplateto
keep everything out. Room temperatures of 68° to 72°F, is best for fermenting cabbage.

2piecrusts,uncooked

1½c.water

1¼c.sugar

1½tsp.creamoftartar

1tsp.cinnamon

1/8tsp.groundginger

¼c.water

3T.cornstarch

1½c.sauerkraut,rinsed,drained,choppedandsqueezed

2tsp.butter

Combine 1½ cups water, sugar, cream of tartar, cinnamon, ground ginger in small
saucepan.Incup,mix¼cupwaterand3tablespoonscornstarch.Addcornstarchmixture
to ingredients in saucepan. Cook and stir on Medium-High until thickened. Spread
sauerkrautoverbottomof1piecrustinpiepan.Pourthickenedsauceoversauerkrautin
piepan.Dotwith2teaspoonsbutter.Puttoppiecruston.Brushmilkoversurfaceofpie
crust and sprinkle with a little sugar. Cut slits in top crust to vent pie. Bake 375° 45
minutes,oruntilgoldenbrown.Servewithascoopofvanillaicecream.Serves8.
