Serves 2
1 cup coconut meat
¼ cup coconut butter
1 teaspoon lemon juice
Pinch salt
3 tablespoons Xylitol
¼ cup water or nut milk
½ cup f rozen berries, thawed
1. Blend all ingredients except the berries in a high-speed blender until completely smooth.
2. Transf er to a bowl and f old in the berries and berry juice.
3. Serve in a glass, topping of f with some of the berry juice.
Banana version
3 ripe bananas
1 ripe avocado
1 teaspoon lemon juice
¼ cup nut milk
