Cinnamon Pistachio Pudding
1 cup pistachio cream*
2 avocados
¼ teaspoon cinnamon
2 pinches salt
2 teaspoons lemon juice
3 tablespoons honey
*Pistachio cream is simply ½ cup pistachios and ½ cup water, blended in a high-speed blender. (No
straining needed.)
1. Blend all ingredients in a high-speed blender until creamy and smooth.
1 cup blackberries, sliced
½ teaspoon macadamia oil
2 tablespoons crushed pistachios
1. Mix the blackberries and macadamia oil in a bowl.
2. Arrange the glazed blackberries on a plate, quenelle the pistachio pudding on top, and then sprinkle
with the crushed pistachios.
