Carrot Cake Honey Bread
INGREDIENTS
2 carrots, diced
1/2 cup oil
1/2 teaspoon cinnamon
1/4 cup honey
1/4 cup sugar
1 1/5 cups all-purpose flour
2 eggs
2 teaspoons baking powder
10 ounces chocolate, melted
1 cup dulce de leche
GARNISH
½ cup melted dulce de leche
PREPARATION
Preheat oven to 180°C/350°F. In a blender, mix carrots,
eggs, oil, honey, sugar, cinnamon, and baking powder.
In a bowl, mix flour with the carrot mixture. Grease your
baking pan, then cover with parchment paper and grease it
with butter. Add the cake mixture, spreading it out so its even.
Bake for 20 minutes or until a toothpick comes out clean.
Let it cool down to room temperature. Cut the cake in small squares.
Using a spoon, spread dulce de leche on the bottom of one piece
and top with another piece to make a mini sandwich. Repeat this
with all the other squares and refrigerate them for 30 minutes.
Cover each piece with melted chocolate and refrigerate until
hardened. Serve with drizzled melted dulce de leche. Enjoy!
