7. READING

Read the following text. Several sentences have been removed from it. Choose from the sentences

a-k the one which fits each gap. There is one extra sentence which you do not need to use.

NEVER, EVER, ORDER WELL-DONE STEAK

Chefs, as we know, can be sensitive creatures. 1) ................................ Add sharp knives and 90ºF temperatures and you've got an explosion waiting to happen. Small wonder the first video I saw at college was called Kitchen Violence.

Tempers flare and injuries happen, but they're kept quiet. 2) ........................................ It is tempting, if only because waiters treat chefs as if they are just sweaty idiots, who nevertheless can magically produce rabbits out of hats.

3) .................................... You can imagine the reaction when the chef hears the news. In spite of this, more blood's spilt by accident than in anger. I discovered early in my career why kitchen plasters are blue, after I'd searched through three buckets of potato mash for a flesh-coloured bandage that had slid off my finger. 4) ....................................... It's no good being upset because there's not much sympathy going - especially if you bleed over another chef's chopped onions or faint on their tray of canapés.

My own restaurant is very professional but during a busy day, when we serve up to 120 meals, things do get frantic. If two of you eat out during a busy time, here's a tip: don't order one meat dish and one fish. 5) .................................. To get the best meal in a busy restaurant, you should both order the same meal - that way they get prepared together. 6) .................................. Chefs treat this choice as personal insult. The worst scenario is when one person at a big table orders well-done steak, when everyone else asks for medium. 7) .................................. You want well-done? Boy, do you get it.

Restaurants can attract professional whingers, who complain about everything from the waitress' perfume to the flowers on the table. 8) ................................... Oddly enough, these people often come back

again, and when the waiters spot them, the kitchen's warned immediately. Strange accidents then seem to occur, like finely diced chillies finding their way into the food...

9) ....................................... Like finding your clothes have been soaked and then frozen or, worse, battered and deep-fried, shoes and all. You can then find yourself wrapped in cling film and dumped in the street. 10) ..........................

Adapted from: "Woman's Own"

a. Much of the shouting in the kitchens is directed at waiters, who have told their customers the chef will be happy to make them anything they like - even if it's not on the menu.

b. Never, ever, order well-done steak.

c. To make sure the well-done meat is cooked at the same time as the rest, it's likely to be chucked in the microwave with the cry: "Nuke it!"

  1. Being a chef, you can't avoid burns and cuts, but if you are lucky you'll only get a couple a week.

e. The kitchen is two flights of stairs away from the restaurant.

f. Departing chefs can expect to be victims of kitchen humour too.

g. Restaurants don't want customers reading about their chefs stabbing each other - or waiters for that matter.

h. I know - it happened to me!

i. If the restaurants is busy, both dishes will be put on to cook together, but the fish will be ready before the meat, so when it's served the fish will probably be cold or dried out.

j. They're usually looking for money off.

k. However, kitchens bring out the worst in people. Imagine a bunch of overworked, stressed out, macho chefs squeezed into a small space.

Listening Text

"YOU CAN'T GET MARRIED HERE..."

Maurice and I had been together for five years. We thought the world of each other and I couldn't wait to marry him. But the day he proposed we could have never imagined what a struggle we'd have to get down the aisle.

The first problem was the church. We wanted to marry where my family's had all its weddings, christenings and funerals, but the curate said no, because we happened to live 100 yards outside the catchment area. We appealed to the parish and got the decision overturned but our troubles were only just starting...

I wanted to wear Mum's wedding dress. She'd worn it 30 years ago so it needed a bit of perking up. I sent it to the cleaners and it came back three sizes smaller. Both Mum and I were devastated. That dress had such sentimental value for us both. We fought for compensation and got £300, but the money wasn't the point. Time was running out. In panic, I ended up buying the first dress I tried on that fitted and looked all right.

Friends had offered us their gorgeous red Mercedes to take us to church, but two weeks before the wedding we discovered they'd sold it. No one had told us! When we heard rumours that the hotel we'd booked for our reception had gone bankrupt, we were in despair. Thankfully, they reassured us it wasn't true. In fact, they did go out of business - but not until our wedding celebrations.

By then, we had started to wonder whether our wedding was meant to be. But all of this turned out to be pretty trivial compared with what was to come. Nine days before our big day there was torrential rain in Wales and our home was completely wrecked. It simply washed away all our furniture and our car. It all disappeared in less than an hour - we were beside ourselves, but we decided we'd been through so much that nothing would stop our wedding now.

Amazingly, there were even more problems. When Maurice picked up his morning suit from the hire place, the jacket was too small and the trousers too short - despite the fact that he'd been fitted only weeks before. The van bringing the replacements broke down and arrived just an hour before the ceremony.

In fact, our wedding day turned out to be very special because of everything we'd been through. It was heart-warming to see how everyone rallied round to help us when they heard our story - many of them were complete strangers, too. A local businessman sent us his Rolls-Royce to take us to church and provided a car for our honeymoon. A little old lady from down the road sent us a card containing £5 and a good luck poem.

Our first six months of married life weren't exactly what we'd dreamt of - we stayed in Mum's spare room while our home was being rebuilt. But things got better and better since then. We've become parents. Jill was born a year and a half after our wedding and her brother, Jake, came along this June. And now we're TV "celebrities": the story of our disastrous wedding is being told in "Weddings from Hell" on ITV on Thursday. Look out for us!
