Key Lime Pie
Makes one 8" pie
Crust
1 cup walnuts or pecans
2 tablespoons f lax meal
ź cup raisins, roughly chopped
2 tablespoons coconut oil
1. Grind all ingredients in a f ood processor until f ully broken down.
2. Press into an 8" springf orm pan.
Filling
1 cup coconut meat
2 avocados
ź cup coconut oil
1 teaspoon lecithin
ź cup agave
ź cup lime juice (pref erably f rom key limes)
Pinch salt
1. Blend all ingredients in a high-speed blender until smooth.
2. Pour onto crust and ref rigerate to f irm up.
