In the study p-lactoglobulin as a potential carrier for vitamin D was characterized. The amino acids seąuence and the results of the whey protein 3-dimensional structure suggest that it posses the ability to bind and transport a variety of ligands, many of which are lipophilic nutrients. If s particularly important nowadays, when a lot of attention is paid to reducing the amount of fat in the diet, which can result in fat soluble vitamin D deficiency. It is advisable to search for vitamin D carriers other than fat. The binding properties of P-lactoglobulin can be implemented to deliver vitamin D without the presence of fat with which it normally associates.
