Add all the ingredients to a blender. Blend until well combined. Pour the

CitrusCilantroDressing

This is so good over any fruit salad, used as marinade or over any fresh green
salad.

Makes1/2cup

Ingredients

1/3cuporangejuice1/3cupfreshlimejuice3tbs.choppedfreshcilantro2tbs.
honey

Directions

In a small sauce pan over medium heat, add the orange juice, lime juice and
cilantro.Bringthejuicestoaboil.Whenthejuicesboil,reducetheheattolow
andsimmerfor5minutes.

Removethepanfromtheheat.Strainthedressingthroughafinesieve.Savethe
liquidandusetheliquidasthedressing.Discardthecilantro.Stirthehoneyinto
thereservedliquid.

running, slowly stream in the vegetable oil. Process until the dressing is well
combinedandsmooth.

Ingredients
5 bacon slices Vegetable oil as needed 2/3 cup red wine or balsamic vinegar 2
1/2tbs.lightbrownsugar1tsp.salt
1/2tsp.cayennepepper1garlicclove,crushed
Directions
Inaskilletovermediumheat,addthebacon.Cookthebaconabout6-7minutes
oruntilthebaconiscrisp.Removethebaconfromthepananddrainonpaper
towels.Crumblethebaconintosmallpieces.

Pour the bacon drippings into a 1/4 cup measuring cup. Add vegetable oil if
neededtomake1/4cup.Addthebacondrippingsandvegetableoiltoaglassjar.
Add the red wine or balsamic vinegar, brown sugar, salt, cayenne pepper and
garlic.Placethelidonthejarandshakeuntilwellblended.

Add the bacon crumbles to the jar and shake to blend the dressing. Serve the
dressingfreshlymadeoratroomtemperature.

RhubarbDressing

Makesabout11/2cups
Ingredients

2cupschoppedrhubarb(freshorfrozen)1/2cupgranulatedsugar1/4cupcider
vinegar3/4cupvegetableoil3tbs.gratedonion11/2tsp.Worcestershiresauce
1/2tsp.salt

Directions

Inasaucepanovermediumheat,addthechoppedrhubarb,granulatedsugarand
cider vinegar. Stir frequently and cook about 6 minutes or until the rhubarb is
tender.Removethepanfromtheheat.

Using a potato masher, mash the rhubarb in the pan. You will not be able to
mashtherhubarblikeyouwouldpotatoes.Youareonlymashingtherhubarbto
releasetherhubarbjuice.Drainalltheliquidfromthepanreservingtheliquid.
Theliquidiswhatyouwillusetomakethedressing.Youshouldhaveabout6
tablespoonsorclosetoahalfcupliquid.

Discardthemashedrhubarb.Addtheliquidtoaglassjar.Addthevegetableoil,
grated onion, Worcestershire sauce and salt. Place the lid on the jar and shake
untilwellblended.Refrigeratethedressinguntilwellchilled.Shakethedressing

Directions

In a small sauce pan over medium heat, add the cornstarch and papaya nectar.
Stirconstantlyandcookuntilthemixturethickensandboils.Boilfor1minute.
Remove the pan from the heat. Spoon the mixture into a small bowl. Cool
completelybeforeusinginthenextstep.

Add the granulated sugar, salt, dry mustard, white wine vinegar, onion and

Placetheredbellpeppersonthebaking sheet.Broiltheredpeppersuntil they
are blistered on each side. Turn the peppers frequently so all the sides are
blistered.

RemovethepeppersfromtheovenandplaceinaZiplocbag.Sealthebagand
letthepeppersrestfor10minutes.Removethepeppersfromthebagand peel
theskinfromthepeppers.Removetheseedsfromthepeppersanddiscard.

Inablendercontainer,addtheredbellpeppers,redwinevinegar,cilantro,garlic
cloves, granulated sugar, salt and black pepper. Process the ingredients until
smooth.Scrapedownthesidesoftheblenderifneeded.

Leave the blender running and slowly add the vegetable oil. Process until well
blendedandsmooth.Spoonthedressingintoasmallbowl.Thedressingcanbe
served freshly made or refrigerated until chilled. Stir the dressing again before
servingifrefrigerated.

1/3 cup white wine vinegar 2 Earl Grey tea bags 1 tsp. Dijon mustard 1/2 tsp.
salt

Directions

In a small sauce pan over low heat, add the white wine vinegar. Bring the
vinegar to a boil. When the vinegar boils, remove the pan from the heat. In a
smallcup,addtheteabags.Pourthevinegarovertheteabags.Lettheteasteep
for30minutes.Removetheteabagsanddiscard.

Add the vinegar, Dijon mustard, salt, black pepper and canola oil to a blender.
Process until the dressing is smooth and combined. Spoon the dressing into a
smallbowl.Stirinthebasilbeforeserving.

Directions

In a small sauce pan over medium low heat, add the pineapple juice, orange
juice, lemon juice, honey and egg. Stir constantly and cook until the mixture
thickens and will coat the back of a spoon. Remove the pan from the heat and
coolcompletelybeforeusing.

While the mixture is cooling, add the dry milk powder to a mixing bowl. Add
themixerbeaterstothebowl.Placethebowlinthefreezer.Whenthebowland
mixerbeatersarefrozen,removethemfromthefreezer.Addtheicecoldwater
andbeatonhighspeedwithamixeruntilstiffpeaksform.

Gently fold the juice mixture from the sauce pan into the mixing bowl. Spoon
the dressing into an airtight container and chill before using. Gently fold the
