3 The bowl-shaped cake i$ used to make Tom‘s head Where the cake has risen. trim away the crust slightiy. Ieavmg a fiat area for the base of Toms head. but stin keep a rounded edge. Slice two layers into the cake and sandwich back together with buttercream.

4 Trim the crust from the round cake and slice the tcp fiat Cut out three circies usmg the circie cutter and stack them on top of each other. Trim all the way around. narrowmg at one er>d to make the mallet shape. Fili each of the layers with buttercream and then spread a thin layer of buttercream over both cakes to help the sugarpaste stick.

MODELLING TOM

5Colour 875g (1 ’/<lb) of the sugarpaste grey using a iittie black focd colounng pastÄ™. Rcil out 750g (1VJb) and use it to cover the bowl-shaped cake completety. smooihing down and around the shape and trimming away any excess. If the cake board is dry. position the cake on the centre of the cake board. (If not. go on to the next steps. puttmg the features in place first before positioning the cake on the board.)

ÓColour just under l$g (7,oz) of the sugarpaste pale grey. Use the tempiate (see p.94). to roli out 3nd cut the fur shape between Tom's eyes. Stick it mto position on the centre of his face, smoothing the edge to remove the ridge.

7Colour I5g ('/.oz) of the sugarpaste pale yellow and 7g (7*oz) green. Sp.it the yellow and green in half and modÄ™! Tom's eyes using the tempiate (see p.94) as a guide. Make Toms pupls using a pe3-sized amount of the black modelling pastÄ™ for each.

8 Use half of the white sugarpaste that was removed from the cake board and shape it into an ovai. Stick this onto the bottom of Tom's face to create his mouth area. Make an openmg for his mouth by pushtng the large end of a bali or bonÄ™ tool into the white sugarpaste at an angle. Use the remaining white removed from the cake board to model two teardrop shapes for Toms muzzie. Stick these in position either side of the mouth area and smooth the point of each teardrop mto the surface unii! the jom is removed. Mark whiskers using the tip of a cocktail stick For Tom s paws. Split 60g (2oz) of white sugarpaste in half and model three teardrop shapes from each. Stick these together to create the paws

9 To give expression to Tom's eyes. spht 7a (V«oz) of the grey sugarpaste m half and model two long teardrop shapes. For his cheeks. Split another 30g (loz) of the grey sugarpaste in half and model two rounded teardrop shapes. Stick these in position with the rounded end edging the muzzie and eye Moisten the points of the teardrops and then smooth these mto the cake surface, until the jom is removed.

Colcur 125g (4oz) ol the modelling pasie grey and 45g (TAoz) pmk. Usmg the step photograph as a guide. Split the grey modelling pastÄ™ m half and model Tom's ears Usmg 3Qg (1oz) o‘ the pmk pastÄ™, cut pteces to cover the mside of each ear. smoothing to remove the r.dge. Stick these in position.
