Crępes with Marmalade & Strawberries
Makes 4 crępes
Crępes
½ cup f lax meal
½ cup chopped zucchini/yellow squash
ź cup young coconut meat
1½ teaspoons lemon juice
2 tablespoons water
ź cup date paste
1D 8 teaspoon salt
½ teaspoon vanilla
1. Blend all ingredients in a high-speed blender until smooth.
2. Form into rounds on a non-stick dehydrator sheet.
3. Dehydrate at 105° f or 7 hours.
4. Remove f rom the non-stick sheet and if not dry to the touch on both sides, return to the dehydrator
f or 30 minutes on a mesh screen. Be sure not to overdehydrate so that the crępes remain pliable.
Marmalade
4 oranges: skin, pith and seeds removed
1 tablespoon honey
1 tablespoon orange zest
1 teaspoon lemon zest
1 tablespoon Irish moss paste (optional)
½ cup date paste
1. Blend all ingredients in a high-speed blender.
2. Transf er to the ref rigerator to f irm up.
Assembly
Strawberries
Optional: chocolate sauce and coconut
1. Chop the strawberries and combine with a small amount of the marmalade in a bowl.
2. Fold a crępe in half , then in half again to f orm a  pocket .
3. Fill with the strawberry and marmalade mixture, then top with the optional chocolate sauce and
coconut.
