CUTTING ANO COVERING THE CAKE
-j Colour 470g (1502) ot the sugarpaste (roiied | fondant) cream. Roli out 315g (10oz) and use to cover the cake board. tnmmmg the excess from around the base. Using your finger. indem fcnes around the outside edge to resembie wheel markings and put aside to dry.
2Tnm the crusts from each cake and sltce the tops fiat, Put the two iarger cakes one on top of the other. Using the cutting diagram as a guide (see p.94). tnm a wedge from the smaiier cake to make a roadway from the top down to the base. Then positton the cake on top of the other two cakes. Tnm the roadway mto the bottom two m the same way. so that the road spirais down and around the cake.
Trim a wedge out of the smallcr cake to creato the top part of the roadway.

3Sandwśch the layers together with buttercream and spread a layer over the surface of the whole cake to help the sugarpasie stick Position the cake centraiiy on the cake board.
4 Using 30g (1oz) of the cream sugarpaste. roli out and cover the top of the cake with a circte of cream sugarpaste Roił out another I25g (4oz) and cut a stnp to cover the roadway smoothing the joins ctósed at each end. Using your finger, indent a spiral on the top of the cake and iines down the road.
