ICołour 440g (i4oz) of the sugarpaste (rołfeci fondant) deep golden brown Roli out and cover the cake board with it. then press the large rollmg prn over the surface to create nppies. Trim away exce$$. smooth around the edge to remove the ndge and pul asde to dry
2Tnm the crust from the cake and slice the top fiat where the cake has risen Cut the cake following the cutting diagram (see p.94). Tnm a littte from the depth of the smailest. then spread each cake with a layer of buttercream to help the sugarpaste stick to U tater
3Colour ikg (2lb) of the sugarpaste golden brown. Using 625g (1’Alb). roH out and cover the two largest sguares. trimming the excess from around each base. Mark deep vertical lines around the sides by pressmg in with the side of a knife. then mark honzontai imes using the blade Position the cakes at opposite ends of the cake board. near the ecge.
4Cover the remaimng cakes in the same way. addmg white sugarpaste to the golden brown for each layer so the stacked cakes are darker at the base and lighter at the top. Make surÄ™ that they are well baianced. and then stick them together with a littte sugar gtue.
