Cut zest f rom the oranges with a knif e or peeler. 2. Remove as much of the white bitter pith f rom the zest as possible. 3. Cut into matchstick-like strips. 4. Mix with the salt and maple syrup. 5. Dehydrate at 115°F f or 12 hours+ or until the zest is dry to touch. 6. Place into the f reezer f or the sugar to crystallise.
