2Tnm the crust from the cake and sltce the top fiat. Cut the cake exactty m half. One haif will be the base of the ranger Cut an 8cm (3m) stnp from the second half to form the front and trim one &de of it to stopÄ™ downwards. For the back, cut a 6cm (2V.in) stnp and trim it to slope downwards as before. Slice this in half to reduce its height. From the remain.ng cake trim a smali oblong shape for the pienie basket. cuttmg it narrower towards the base to create sloping sides
3Sandwich the layers together with buttereream. then spread a thm layer over the surface of the cake to help the sugarpaste sbek. Place the ranger cake on the centre of the cake board and put the pienie basket cake aside for later
4Colour lOOg (3’Aoz) of the sugarpaste Wack. Thmly roli out and cut a stnp 56 x 4cm (22 x 17;in) to ccver around the base of the cake Dust this v/ith icmg (confectioners) sugar to prevent it sticking and then roli :t up from one end. Put it m place and then unroll it around the base of the cake. trimming excess and smoothing the join closed
The r angor's base is mado from half of the cako. Cut the rcmammg half to crcate the front, back and basket.
Once the cake has been covered in buttereream. thinly roli out and cut a black strip to cover around the base.
