IColour 3tSg (10oz) of Ihe sugarpaste (roiled fondant) blue. Roli this out and cover the cake board completefy. tnmmmg the excess from around the edge. then put U aside to dry.
2Tnm the crust from the cake and slice the top fiat where the cake has risen Cut the cake into four equaily sized squares and stack these one on top of the other. To shape Cow'3 head tnm the top of the cake. slicmg down and out alt the way round. from the top layer down to the nexi. cutting a deeper wedge at the back
3 Tnm off all corners around the cake to round it off Sandwsch alt the layers together using buttercream. then spread a thin layer over the cake's surface to help the sugarpaste stick

4Cotour 875g (1VJb) of the sugarpaste pale yellow Roli out 750g (1'<Mb) and cut an oblong measunng 35cm (14in) in length and 20cm (8in) m height Dust it kberally with icmg (confeclioners) sugar to prevent sticking and roli it up at either end. Position against the front of the cake and then carefully unroli the sugarpaste around it
