Serves 2–4
2 cups melon juice
1 cup cubed melon
½ cup orange juice
2 tablespoons lime juice
½ cup sliced red grapes
1⁄8 teaspoon salt
1 teaspoon f resh mint
¼ cup cucumber, peeled and cubed
Drizzle olive oil
1. Combine all ingredients except the olive oil in a bowl.
2. Serve chilled in individual bowls, and then top with a drizzle of olive oil.
