Waffles
Serves 2 to 4
Waf f les
½ cup peeled zucchini
¼ cup pecans
¼ cup macadamias
¼ cup f lax meal
¼ cup coconut f lour
2 tablespoons Xylitol
1 teaspoon lemon juice
1 cup almond milk
Pinch salt
1. Blend all ingredients in a high-speed blender until smooth.
2. Transf er mixture to a piping bag.
3. Pipe the mixture in square grids on a non-stick dehydrator tray.
4. Place in a dehydrator f or 12 hours at 105º F.
Chocolate sauce
½ cup cashews, soaked 20 minutes
¼ cup maple syrup
¼ cup cacao powder
¼ teaspoon vanilla
Pinch salt
¼ cup water
1. Blend all ingredients in a high-speed blender until smooth.
2. Place in the ref rigerator until ready to use.
Whipped cream
1 cup cashews, soaked 20 minutes
½ cup water
3 tablespoons Irish moss paste
½ teaspoon vanilla extract
Pinch salt
1. Blend all ingredients in a high-speed blender until smooth.
2. Transf er to a piping bag and place in the ref rigerator to f irm up f or a f ew hours.
To serve
1 cup f resh f ruit; in the picture, we used banana and strawberries.
1. Place one waf f le on a plate and top with some cream, f resh f ruit and then drizzle with
chocolate sauce.
2. Place anther waf f le on top and repeat topping ingredients. Repeat using 5 waf f les in total. For
smaller portions, 3 waf f les work well too.
3. Optional: top with candied pecans or almonds.
