Nanaimo Bars
Base layer
¼ cup coconut f lour
½ cup macadamias
¼ cup oat f lour
2 tablespoons agave
¼ teaspoon vanilla extract
2 tablespoons coconut butter
¼ cup date paste
¼ cup cacao powder
1. Grind all ingredients in a f ood processor.
2. Press into the bottom of a cake pan.
Second layer
1 cup young coconut meat
¼ cup coconut oil
¼ cup agave
2 teaspoons vanilla
Pinch salt
1. Blend all ingredients in a high-speed blender until smooth.
2. Spread evenly on top of the base layer.
Third layer
½ cup agave, maple syrup, or honey
1 tablespoon coconut oil, melted
¼ teaspoon salt
½ teaspoon vanilla extract
½ cup cacao powder
¼ cup cacao butter, melted
1. Blend all ingredients in a high-speed blender until smooth.
2. Spread evenly on top of the second layer.
3. Place the whole thing in the f reezer.
4. Cut into squares, leaving out of the f reezer 10 to 20 minutes bef ore serving.
