Banana Cupcakes
Makes approximately fifteen 2" cupcakes
1¼ cups peeled zucchini
2 cups coconut f lour
1 cup oat f lour
¾ cup agave
¼ cup Irish moss paste
1 teaspoon vanilla extract
¼ cup f lax meal
½ teaspoon salt
2 bananas, pureed
1. Mix all ingredients in a bowl by hand or grind in a f ood processor.
2. Form into 2" mini-cupcakes and dehydrate f or 10 hours at 105° F.
Icing
1 cup cashews, soaked 20 minutes
½ cup water or nut milk
½ cup coconut meat
½ cup agave
1 teaspoon lemon juice
1 tablespoon vanilla extract
Pinch salt
½ cup melted coconut oil
Optional: 3 drops orange extract
1. Blend all ingredients in a high-speed blender until smooth.
2. Transf er to a piping bag and place in the f ridge.
3. Pipe onto cupcake bases.
